PREFACE.
If a Dedication, or Introduction to the following Work should bethought necessary, I most humbly, and justly address it to theexcellent Dairy-Women, of Great Britain; dulysensible, that from them I received the first hints that led me to theperformance, and without whose assistance and encouragement, joinedwith my own knowledge and experience, I should never have offer’d it tothe Public.
The real design of this Work, is to assist those who are not fullyacquainted with the most proper methods, necessary to be used in themanagement of a Dairy; I have made it my endeavour to renderevery part as plain and intelligent as possible, and am in hopes upona[Pg vi] due Observation of the rules laid down many will find their accountin it. It is my sincere wish, that it may be a means of improving thequality, as well as enlarging the quantity of Cheese, throughthe Kingdom; and become extensively useful to the community in general.
As the Publication of this Work has met with a very ready sale, & beenmuch approved of in general, and many who have carefully apply’d therules for Dairying therein laid down, have deriv’d great advantagefrom it, which the Author has by many, been inform’d of; encourageshim to print a second Edition, and having omitted the other treatisesupon Orchards and Vegetation, in order to bring theprice more moderate, hopes that, will cause it to be more read byDairy-Women, who if they pay a due attention to it, cannothelp receiving benefit from the advice it contains.
