When the series of articles now collected inthis volume was first discussed between theirauthor and myself in the early part of 1897, wefound it a matter of no slight difficulty to determinewhat range they should take, and to whatclass of establishments they should be confined.There is no accounting for the variety of people'stastes in the matter of eating and drinking, andamong the readers of the Pall Mall Gazettepersons no doubt could be found ranging fromthe Sybarite, who requires Lucullus-like banquets,to him of the simple appetite for whom littlemore than a dinner with Duke Humphrey wouldsuffice. Consequently, the choice of places tobe visited had to be made in a catholic spirit,with the necessary result that a formidably longlist was prepared. In selecting Colonel Newnham-Davisto carry out this commission for the[Pg viii]Pall Mall Gazette, I knew I was availing myselfof the services of a thoroughly experienced, trustworthy,and capable commissioner, who woulddeal with the task entrusted to him in a pleasantlymixed anecdotal and critical spirit, while at thesame time supplying useful guidance to personswanting to know where to dine and what theywould have to pay. In the following pages itwill be seen how well he carried out the duty heundertook, and I am able to add that "Dinnersand Diners" had a great vogue and very wide popularityamong the readers of the Pall Mall Gazette.There were very many requests from variousquarters that they should be collected into bookform, and this has now been done with some valuableadditions included in the shape of recipes andother information. In these days, when the tastefor dining at restaurants is so largely on theincrease, I have little doubt that the republicationof these articles will be welcomed, and that theywill supply not only interesting but useful information.
